Who’s the special guest? It’s Mommy Week, so I think it’s pretty obvious…
Yep! You guessed it. My sous chef for this project was my Little Davy. This is not only a great idea for any of you to try with your children, but it’s also a super easy recipe for anyone out there- parents or not! Davy really helped out a lot with this which is proof that these popsicles are pretty fool-proof (ie. Popsicle Making For Dummies 😛 )!
Plus! They’re really healthy while still satisfying some serious cravings! I will definitely be making these all summer for the beach.
What you’ll need:
1 (12) oz. container of POM Wonderful Coconut Juice Blend, or if you have some sort of pomegranate or coconut water you prefer, go for it!
2 containers of Low-Fat Greek Yogurts. I used 4 different flavors, but only needed about half of each. Choose your flavors, I liked vanilla the best!
Fruit of Choice – I recommend strawberries, blackberries, raspberries and kiwi.
Popsicle Containers to keep in the freezer. I found mine at Walmart.
Yield: 12 popsicles
It’s pretty self explanatory, really, but here we go!
1. Fill the popsicle holders about 1/3 or 1/4 of the way up with your coconut water or juice.
2. Drop in your fruit. David was awesome at helping with this 🙂 Well, at first he would stuff a bunch of raspberries into one container until it overflowed, but once he got the hang of it, he liked counting them out “1 strawberry, 1 kiwi, 1 blackberry…” and so on!
3. Finish it off with a spoonful or two of yogurt. Mine were filled pretty high, but still had some room for the sticks to be put in.
4. Put on the sticks/lids and allow the popsicles to freeze overnight!
Tips if your toddler is helping…
Be prepared for a mess.
Be prepared for some of the fruit to “go missing”.
And be prepared for the popsicles to turn out perfectly imperfect. 🙂
